الطعام في التراث الشعبي بمنطقة تبسة بين الطقس والمناسبة - مقاربة انتروبولوجية

Abstract

تتناول هذه المذكرة دراسة الطقوس الغذائية المرتبطة بالمناسبات الاجتماعية في ولاية تبسة، باعتبارها جزءًا لا يتجزأ من التراث الثقافي اللامادي الذي يعكس الخصوصية المحلية للسكان. وتهدف إلى إبراز البعد الرمزي والاجتماعي للأطعمة التقليدية، والكيفية التي تُعبّر بها عن قيم مثل الكرم والتكافل والانتماء الجماعي. كما تسعى إلى تحليل الأبعاد الطقسية المرتبطة بتحضير وتقديم الطعام خلال المناسبات المختلفة، من أفراح وزردات إلى عزاءات وخُطب. اعتمدت الدراسة على المنهج الوصفي التحليلي، مع توظيف العمل الميداني من خلال ملاحظات مباشرة وشهادات شفوية. وقد أظهرت النتائج أن الطقوس الغذائية لا تزال حاضرة بقوة في المخيال الجمعي، رغم التحولات الاجتماعية المعاصرة، مما يدل على متانة الروابط الثقافية للمجتمع التبسي. This dissertation explores the food-related rituals associated with social occasions in the Wilaya of Tébessa, considering them an integral part of the region’s intangible cultural heritage. It aims to highlight the symbolic and social dimensions of traditional dishes and how they reflect values such as generosity, solidarity, and communal identity. The study analyzes the ritual aspects of food preparation and presentation during various events, including weddings, religious feasts (zarda), funerals, and engagement ceremonies. Using a descriptive and analytical methodology supported by fieldwork—through direct observation and oral testimonies—the research reveals that food rituals remain deeply rooted in collective memory despite ongoing societal transformations. This suggests the enduring strength of cultural bonds in the Tébessa community.
