Contribution à l’étude des caractéristiques physicochimique et microbiologique d’une Boisson traditionnel issus de la région d’Oued Souf (Sud Est Algérien)

Abstract

Résumé Cette étude a pour but de déterminer la qualité physicochimique et la qualité microbiologique d’une boisson traditionnelle nommée « El WEZWEZA » issu de la région d’Oued Souf. Composé en majeur partie de quarante plantes médicinales et prétend avoir plusieurs effets thérapeutique et bienfait sur la santé. Pour cela une petite enquête sous forme d’interview a été menée auprès de quelques habitants de la région. L'ensemble des résultats des analyses physico-chimique et microbiologique obtenus (Eau et Boisson) sont révélé non conformes aux normes, ce qui certifie la mauvaise qualité de la boisson à cause de manque d'hygiène pendant la fabrication de boisson. Composed in major part of forty medicinal plants and claims to have several therapeutic effects and benefits on health. For this purpose, a small survey in the form of an interview was conducted with some inhabitants of the region. All the results of the physicochemical and microbiological analyses obtained (water and drink) are revealed not to be in conformity with the standards, which certifies the bad quality of the drink because of lack of hygiene during the manufacture of drink. Key words: WEZWEZA, traditional drink, microbiological quality, physicochemical quality, standards ملخص تهدف هذه الدراسة إلى تحديد الجودة الفيزيائية والكيميائية والجودة الميكروبيولوجية لمشروب تقليدي يسمى "الوزوزا" من منطقة واد سوف. يتكون في الغالب من أربعين نباتًا طبيًا ويُزعم أن لها العديد من الفوائد العلاجية والصحية. لهذا تم إجراء تحقيق صغير على شكل مقابلة مع بعض سكان المنطقة. تم العثور على جميع نتائج التحليلات الفيزيائية والكيميائية والميكروبيولوجية التي تم الحصول عليها )المياه والمشروبات( غير متوافقة مع المعايير ، والتي تشهد على رداءة جودة المشروب بسبب نقص النظافة أثناء تصنيع المشروب. الكلمات المفتاحية: الوزوازة ، مشروب تقليدي ، جودة ميكروبيولوجية ، جودة فيزيائية كيميائية ، معايير.
