Evaluation De La Qualité Et De L 'Acceptabilité De Pate Alimentaire A Base De laurier (Laurus Nobilis)

Abstract

Résumé La pâte alimentaire est un produit préparé par pétrissage, sans fermentation, de la semoule de blé dur additionnée d’eau. L’objectif de notre travail ; consiste à l’évaluation de l’activité antioxydante et antibactérienne d’huile essentielle de laurier, obtenue par hydrodistillation des parties aériennes d’herbe aromatiqus qui est le laurier, et l’accessibilité des pâtes alimentaire a base des huiles essentielle de laurier et l’eau de l’infusion de laurier, et déterminer l’effet sur la qualité physicochimique et organoleptique sur les pâtes alimentaire fabriquées D’après les résultats obtenus, les deux pâtes fabriquées sont acceptable a la consommation à celle de la pâtes témoins, et donne un effet aromatisons et une bio conservation (antioxydante et antibactérienne). Abstract pasta is a product prepared by kneading, without fermentation, durum wheat semolina with added water. The objective of our work consists in the evaluation of the antioxidant and antibacterial activity of essential oil of laurel, obtained by hydrodistillation of the aerial parts ofaromatic herb that is the laurel, and the accessibility of the food pastes hasBased on the essential oils of laurel and the water of the infusion of laurel, and determine the effect on the physicochemical and organoleptic quality of the pasta manufactured.According to the results obtained, the two manufactured pasta are acceptable to the consumption, compared to the control pasta, and that they have a flavouring effect and a bio-preservation (antioxidant and antibacterial).
