Contribution à l’étude des modalités d’inspection et des motifs de saisies des viandes rouges à l’abattoir de Ferdjioua- Wilaya de Mila.

Abstract

Résumé Chaque être humain a le droit à l’accès à une nourriture saine et nutritive, conformément au droit de chacun d'être à l'abri de la faim et il est essentiel de garantir la sécurité sanitaire des produits d’origine animale, ce qui constitue l’une des fonctions essentielles de la santé publique et de la sécurité alimentaire Notre étude a été réalisée afin d’évaluer les modalités d’inspection de la viande rouge bovines au niveau de l’abattoir pour connaître les actions menées par les différents acteurs d’inspection et aussi d’apprécier l’application sur le terrain des dispositions législatives et règlementaires nationales relatives à la sécurité sanitaire des aliments d’origine animale. A l’abattoir de Ferdjioua, nous avons constaté durant notre travail, une application des textes règlementaire qui restent satisfaisante par rapport aux remarques qui ont été enregistré dans le cadre de travaux antérieures effectués aux niveaux des abattoirs publiques communaux de Seybous à Annaba et Ain El Assel a El Tarf, signalant des difficultés et des insuffisances dans le suivi et l’évaluation de l’application des textes législatifs et réglementaires, probablement suite à l’insuffisance de moyens matériels et humains entravant leurs applications effective sur le terrain. Abstract Every human being has the right to access to safe and nutritious food, in accordance with the right of everyone to be free from hunger and it is essential to ensure the safety of products of animal origin, which is one of the essential functions of public health and food safety Our study was carried out in order to assess the inspection methods for red bovine meat at the slaughterhouse level in order to know the actions carried out by the various inspection actors and to assess the application on the ground of the provisions, national laws and regulations relating to the safety of food of animal origin.
