Analyse phytochimique de l'huile essentielle de Thymus vulgaris et son impact sur le soulagement des troubles fonctionnels : Utilisation dans la préparation d'un yaourt naturel.

Abstract

Résumé Ce travail implique la préparation d'un yaourt nature contenant de l'huile essentielle extraite des feuilles séchées de la plante médicinale Thymus vulgaris. L'objectif est de produire un produit sain ayant des propriétés thérapeutiques. Cette préparation a été réalisée au laboratoire de recherche Ecologique Fonctionnelle et Evolutive de l'université Chadli Bendjedid El Tarf. Afin de vérifier le contrôle de qualité de ce produit, nous avons mené une étude les propriétés physico-chimiques, sensorielle et les activités biologiques de ce dernier. Les résultats obtenus montrent que cette plante médicinale indigène, le Thymus vulgaris a des propriétés antioxydantes et antibactériennes, offre une opportunité d'utilisation en tant que conservateur biologique dans la fabrication de yaourt. Ainsi, il est possible de produire un yaourt sain et thérapeutique, bénéficiant des propriétés médicinales spécifiques de cette plante. Abstract v Abstract This work involves the preparation of a natural yoghurt containing essential oil extracted from the dried leaves of the medicinal plant Thymus vulgaris. The aim is to produce a healthy product with therapeutic properties. This preparation was carried out at the ecological, functional and evolutionary research laboratory of the Chadli Bendjedid El Tarf University. In order to verify the quality control of this product, we conducted a study of the physico-chemical and sensory properties and the biological activities of the latter. The results obtained show that this indigenous medicinal plant, Thymus vulgaris, has antioxidant and antibacterial properties, offers an opportunity for use as a biological preservative in the manufacture of yogurt. Thus, it is possible to produce a healthy and therapeutic yogurt, benefiting from the specific medicinal properties of this plant.
