Caractérisation physico-chimique et l’évaluation de la qualité du blé dur (Triticum durum Desf) algérien de la région de Besbes destinée à la panification.

Abstract

Résume Ce travail est réalisé afin de faire une caractérisation physico-chimique, et l'évaluation de la qualité d'une variété de blé dur algérien de la région de Besbes, wilaya d'El Tarf, destinée à la panification. Plusieurs analyses ont été effectuées, telles que :  Le contrôle de qualité pour déterminer la qualité de notre blé.  Le screening phytochimique afin de mettre en évidence la présence de groupes phytochimiques spécifiques.  L'analyse physico-chimique pour connaître les caractéristiques et la composition du blé. Les résultats du contrôle de qualité ont montré que le blé de cette région est de bonne qualité. Les résultats du screening phytochimique ont montré que cette variété de blé contient plusieurs groupes phytochimiques spécifiques. Les analyses physico-chimiques ont montré que l'échantillon de blé a un pH de 6,4, un taux d'acidité de 0,01% et un taux de cendres de 3%.

Abstract This work is carried out to perform a physicochemical, characterization and evaluation of the quality of a variety of Algerian durum wheat from the Besbes region, Wilaya of El Tarf, intended for baking. Several analyses were conducted, including:  Quality control to determine the quality of our wheat.  Phytochemical screening to highlight the presence of specific phytochemical groups.  Physicochemical analysis to determine the characteristics and composition of the wheat. The quality control results showed that the wheat from this region is of good quality. The phytochemical screening results indicated that this variety of wheat contains several specific phytochemical groups. The physicochemical analyses showed that the wheat sample has a pH of 6.4, an acidity level of 0.01%, and an ash content of 3%. ملخص: تم تنفيذ هذا العمل لإجراء توصيف فيزيائي كيميائي وتقييم جودة نوع من القمح الصلب الجزائري من منطقة بسباس، ولاية الطارف، المخصص للخبز. تم إجراء عدة تحليلات، بما في ذلك :  مراقبة الجودة لتحديد جودة القمح .  الفحص الكيميائي النباتي لإبراز وجود مجموعات كيميائية نباتية محددة .  التحليل الفيزيائي الكيميائي لمعرفة خصائص وتركيب القمح . أظهرت نتائج مراقبة الجودة أن القمح من هذه المنطقة ذو جودة جيدة. أظهرت نتائج الفحص الكيميائي النباتي أن هذا النوع من القمح يحتوي على عدة مجموعات كيميائية نباتية محددة. أظهرت التحليلات الفيزيائية الكيميائية أن عينة القمح لها درجة حموضة تبلغ 6.4 ، ومستوى حموضة يبلغ 0.01 %، ومحتوى رماد يبلغ 3%
