Abstract
Résumé
Le lait cru de vache constitue une matière première essentielle de la filière agroalimentaire, et sa qualité physico-chimique et microbiologique conditionne directement la santé publique. Ce travail propose une synthèse bibliographique portant sur les caractéristiques du lait cru, ses dangers, ses paramètres d'évaluation, ses méthodes d'analyse et les systèmes de maîtrise de la qualité, complétée par une enquête de terrain menée dans cinq wilayas du Nord-Est algérien : Annaba, Skikda, El Tarf, Guelma et Souk Ahras.
Les résultats de la synthèse montrent que la qualité du lait cru dépend de multiples facteurs liés à l'animal (race, alimentation, santé de la mamelle), aux conditions de traite et d'hygiène, ainsi qu'aux pratiques de collecte et de transport. La contamination microbienne, la présence de résidus d'antibiotiques et les mammites subcliniques demeurent les principales contraintes relevées dans la région d'étude, malgré les progrès réalisés grâce à l'adoption de démarches qualité telles que le HACCP et la norme ISO 22000 dans plusieurs laiteries algériennes.
Ce travail souligne la nécessité de renforcer l'hygiène à la ferme, le suivi sanitaire des troupeaux et la traçabilité du lait, afin d'améliorer durablement la qualité du lait cru destiné à la transformation laitière dans l'Est algérien.
Abstract
Raw cow's milk is an essential raw material of the dairy industry, and its physico-chemical and microbiological quality directly affects public health. This work provides a literature review covering the characteristics of raw milk, its hazards, evaluation parameters, analytical methods and quality control systems, supplemented by a field survey carried out in five wilayas of North-Eastern Algeria: Annaba, Skikda, El Tarf, Guelma and Souk Ahras.
The review shows that raw milk quality depends on multiple factors related to the animal (breed, feeding, udder health), milking and hygiene conditions, as well as collection and transport practices. Microbial contamination, antibiotic residues and subclinical mastitis remain the main constraints identified in the study area, despite progress achieved through the adoption of quality management systems such as HACCP and ISO 22000 in several Algerian dairies.
This work highlights the need to strengthen farm hygiene, herd health monitoring and milk traceability in order to sustainably improve the quality of raw milk intended for dairy processing in Eastern Algeria.
