Contribution à l’étude de la qualité physico-chimique de l’huile d’olive de la région d’El-Tarf

Abstract

Résumé Cette étude vise à évaluer quelques caractéristiques physico-chimiques de l’huile d’olive de la région d’El-Tarf (Est Algérien). Pour cela 04 échantillons provenant de différentes régions de la wilaya (Bougous , Bouhadjar, Ain-khiar, zitouna) ont été examiné et les résultats obtenus révèlent des différences importantes à savoir: l’indice d’acidité entre (2.03 % et 3.46 % ), l’indice de peroxyde comprise entre (15.01 et 24.01meq) et l’humidité qui a une valeur se situe entre (0.13 % jusqu’à 0.18 %) On peut conclure que les huiles analysées sont conforme aux normes internationales applicables aux huiles d’olives. Abstract This study aims to evaluate some physico-chemical characteristics of olive oil in the region of El-Tarf (eastern Algeria), For this, 04 samples from different regions of the wilaya (Bougous, Bouhadjar, Ain-khiar, zitouna) were examined and the results obtained reveal significant differences, namely: the acidity index between (2.03 and 3.46), peroxide value between (15.01 and 24.01), the humidity which has a value is between (0.13 to 0.18). It can be concluded that the oils analyzed comply with the international standards applicable to olive oils. Key words: Olive oil, Physico-chemical analyzes, ELTARF, Acidity index, Peroxide index, moisture ملخص تهدف هذه الدراسة إلى تقييم بعض الخصائص الفيزيائية والكيميائية لزيت الزيتون في منطقة الطرف )شرق الجزائر(. لهذا الغرض تم فحص 40 عينة من مناطق مختلفة من ولاية )بوغوس ، بوحجار ، عين خيار ، زيتونة( والنتائج التي تم الحصول عليها تكشف عن فروق ذات دلالة ، وهي: مؤشر الحموضة بين ) 3.42 و 2.03 ( ، قيمة البيروكسيد بين ) 10.41 ) و 30.41 ( ، والرطوبة التي لها قيمة ما بين ) 4.12 إلى 4.10 . يمكن أن نستنتج أن الزيوت التي تم تحليلها تمتثل للمعايير الدولية المطبقة على زيوت الزيتون الكلمات المفتاحية: زيت الزيتون ، التحليلات الفيزيائية والكيميائية ، الطارف، مؤشر الحموضة ، مؤشر البيروكسيد ، الرطوبة.
